Glazes for Corned Beef Brisket

Red Currant Mustard Sauce

12 oz. red currant jelly
3 T. whole grain Dijon mustard

Melt jelly in a saucepan or a bowl in the microwave.  Add mustard and simmer for about 8 minutes.
 

Orange Glaze

1/2 c. orange marmalade
1/2 c. Dijon mustard
2 T. prepared horseradish sauce
2 T. Worcestershire sauce

Mix all ingredients in a saucepan and simmer for about 10 minutes.

Honey Mustard Glaze

1/4 c. honey
1 T. Dijon mustard

Combine above ingredients.

 

Cook your corned beef in water at a slow simmer for about 3 hours.  Remove from liquid and place, fat side up, on rack in broiler pan so surface of meat is 3-4 inches from heat.  Brush on your glaze of choice and broil for 3 minutes.  Brush with more glaze and continue broiling 2 more minutes or until the meat is glazed.  Allow to rest for 10 minutes and carve brisket diagonally across the grain into thin slices and serve with cabbage.
