Corned Beef and Cabbage

(Crock Pot)

  • 4 pounds corned beef brisket (you might have to cut in half to fit in crock pot)
  • 1/2 cup chopped onion
  • 2-3 bay leaves
  • 1 t. minced garlic
  • 4-5 peppercorns
 
  • 1 small head of cabbage
  • 1 teaspoon salt
  • 1 or 2 tablespoons lemon juice
 

 

Place corned beef, onion, bay leaves, garlic and pepper corns in the crock pot with enough water to barely cover. Cover and cook on LOW for 9 to 10 hours. To cook cabbage, place cabbage wedges in a large covered saucepan or Dutch oven. Add about an inch of water, 1 teaspoon salt, and 1 or 2 tablespoons lemon juice. Cover and boil for about 10 minutes, until wedges are tender. Serve cabbage with sliced corned beef and other cooked vegetables.  Serves 8.
