Roast Pork Loin
| 4 to 6 pounds
pork loin ,trussed with butcher twine. |

| 4 to6 garlic
cloves, chopped. |

4 to 6
tablespoons fresh thyme, woody stems removed and chopped.
Salt and freshly ground pepper.
Olive oil. |

Rub pork loin with garlic and thyme and
season well with salt and pepper. drizzle with olive oil.
Marinate in a plastic bag for at least two hours to overnight.
Brown all sides and roast on a rack in a roasting pan in a pre-heated 350
degree oven. Cook until center of loin reaches 160 degrees, about 40
minutes. Allow to rest for 10 minutes before carving.
