Roast Pork Loin

4 to 6 pounds pork loin ,trussed with butcher twine.
4 to6 garlic cloves, chopped.
4 to 6 tablespoons fresh thyme, woody stems removed and chopped.
Salt and freshly ground pepper.
Olive oil.

Rub pork loin with garlic and thyme and season well with salt and pepper.  drizzle with olive oil.  Marinate in a plastic bag for at least two hours to overnight.
Brown all sides and roast on a rack in a roasting pan in a pre-heated 350 degree oven.  Cook until center of loin reaches 160 degrees, about 40 minutes.  Allow to rest for 10 minutes before carving.

Yield:           6 to 8 servings
Prep Time: 2 hours 15 minutes
