ROAST GOOSE

1 10-14 pound goose
Salt
Freshly ground black pepper
Pinch of dried thyme
1 Apple (peeled, cored and sliced)
1 Onion (peeled and sliced)
Water or chicken stock
  1. Preheat oven to 375 degrees

  2. Sprinkle the goose inside and out with salt and pepper.  Sprinkle the thyme in the cavity.

  3. Put the goose (breast side DOWN) in a roasting pan.  Put the sliced apple and onion around the goose in the pan.  Pour in enough water to come halfway up the sides of the goose.  Roast for 2 to 2-1/2 hours.  Add more water as necessary and stir it into the pan juices.  Turn the goose breast side up and roast for 1-1/2 to 2 hours longer, or until the meat is tender and the skin is brown.  Add more water if necessary and stir it into the pan juices.  Remove the goose to a serving platter and keep it warm.

  4. Degrease the sauce and strain it.  Correct the seasonings if necessary and serve the sauce with the carved goose.  Lingonberry sauce goes nicely with the goose.
